"Regarding myself, as an admin I can view some stats of the site such as the number of registered users, the total number of boards, total number of cards ... etc. To be honest, I won't view any of the private boards data ever as long as the user didn't ask me to if problems occurred. This case happened a few months ago when one of the users found a problem that I couldn't reproduce locally on my development machine and I asked to give me access to her canvas and she sent me an invitation to her canvas to be able to check it out.
